Creamy and soft, the Ricotta of Buffalo from Campania PDO is made using only sweet whey from the processing of Buffalo mozzarella from Campania PDO. Born as a “reclaimed” product, it is a symbol of our agriculture and of the heritage, typical to the territories of Southern Italy.
Ricotta of Buffalo from Campania PDO is a fresh dairy product, i.e. not matured. As provided for in the Production Rules of the Denomination, it is obtained by heat coagulation of the whey of buffalo milk (the prime material from the production of Buffalo mozzarella from Campania PDO) processed within 24 hours of its extraction. This gives it particular structural characteristics of creaminess and softness.
