Buffalo mozzarella from Campania PDO is a fresh, soft spun dough cheese made exclusively from whole buffalo milk. Buffalo mozzarella from Campania PDO by ABC is made by processing fresh milk from our farms on the daily through hand spinning. The buffalo milk is slowly pasteurised and processed with the addition of natural whey starter, salt and rennet.
It is made without the use of preservatives and contains no gluten.
For Braids, after spinning by hand, even the weaving of the dough is done by hand thanks to the exfoliation and skill of the cheese-makers, reflecting gestures handed down through generations. This gives the Braid a firmer consistency than the classic Buffalo mozzarella from Campania PDO, which goes hand in hand with the incomparable visual effect.
